Veggie chili is probably my favorite thing to make. It's so easy and really filling and healthy. I'm enjoying a bowl of this today at home on my day off with my unemployed Matt. I use this recipe from Muir Glen. The fire roasted tomatoes are key, don't substitute something else! I like mine topped with cheese, scallions, cilantro and some tortilla chips.
I'm having a productive day at home. I submitted the artwork for the stickers I want to use for my packaging and I'm starting to slowly clean out some things in anticipation of the move. I'm posting some furniture on craiglist to sell and I've got a pile of blank cardstock and envelopes in my craft closet I need to get rid of. These are perfectly good, I just have no use for pre-cut and pre-scored cards because I print on larger sheets, which I cut down. I'll post a bunch of sets tomorrow here on the blog and the first to claim them in the comments gets it, I'll ask for a couple bucks from you to cover shipping costs. Really I just want this stuff to go to someone who can use it.

Ohhhh, that chili looks so good! Where do you get the fire-roasted tomatoes? It seems like a Whole Foods kind of thing, but maybe at TJ's?

Katherine: I get them at Shaw's which is just the standard grocery store here in Boston, they are in the organic aisle. Whole Foods would definitely have them, I looked for them the last time I was at TJ's but didn't find them there.
